Growing up on an organic farm and winery on the bluffs of the Mississippi River in Iowa, Brent’s interest in good food, wine, and sailing started at a very young age. His first job was working as a busboy and waiter in a small restaurant but after attending law school in the Pacific Northwest, he moved to New York City to pursue his other passion – standing up for the rights of workers and consumers – founding his own law firm in 2007. Brent Pelton fell in love with Greenport, and specifically Stirling Square, when he had dinner in the square during the summer of 2011. Only a few years later, Brent had the opportunity to purchase the square to become a part of the community and environment that he was drawn to. With American Beech, Brent combines his passions and returns to his restaurant beginnings, putting his own touch on the square’s anchor dining establishment with his strong work ethic and joie de vivre. When not working at American Beech or his law firm, you can find Brent sailing his boat around Greenport Harbor.
A Southold native, Kyle Romeo’s culinary interest was sparked by the bounty and beauty of the North Fork’s farms and bays. Romeo began in the front of the house as an expeditor at the Jamesport Manor Inn, working with Steve Gallagher, now owner of Trattoria in St. James. Romeo’s enthusiasm for the atmosphere and energy behind the line was observed by Gallagher, who taught him to cook family meal for the staff. Shortly, Romeo was hooked. Over the last several years, he has honed his skills at various East End restaurants, ranging from Stonewalls to Jedediah Hawkins to North Fork Table and Inn.
Romeo’s love of cooking has heightened his appreciation for local sourcing and growing his own food. Romeo and his wife, chef Amanda Falcone, grow a wide variety of produce and raise pigs on the family farm, where they are also trying their hand at organic mushroom gardening and maple sugaring.
Romeo has been a member of the American Beech team since August 2015, shortly after their opening. The restaurant quickly became a popular and bustling spot for both locals and visitors, an ideal place for Romeo to grow and create.
